Easy omelette

Ingredients:

  • 3 large eggs
  • 2 tablespoons milk
  • 1/2 teaspoon Cajun seasoning
  • Salt and pepper to taste
  • 1/2 cup of cooked turkey bacon or turkey sausage
  • 1/4 cup of shredded cheese or cheese of your choice
  • 1/4 cup of cooked collard greens or spinach Olive oil or butter for cooking.

Steps

  • Prepare the ingredients: Crumble cooked bacon or sausage. Sauté collard greens or spinach in a little olive oil or butter until tender. Set aside both meat and vegetables.
  • Whisk the eggs in a bowl together with milk, salt, pepper, and Cajun season. For a ufer omelette whisk the egg mixture for a half a minute.
  • Pour the egg mixture into a buttered pan. Allow it to cook undisturbed for about 1- 2 minutes or until the edges start to set.
  • Add lling once the eggs begins to set, sprinkle half of the cheese, crumbled sausage/bacon, and vegetable over one side of the omelette
  • Carefully fold the other half over the llings and cook for another minute until the cheese is melted, and the eggs are fully cooked. Sprinkle any remaining cheese over the folded omelette, removed from the pan and transfer to a plate.Enjoy
