Individual Key Lime Pies

Ingredients:

  • 3 egg yolks
  • 1(14 ounce) can sweetened condensed milk
  • 1/3 cup lime juice
  • 1/2 teaspoon of lime zest
  • 2 drops of green food coloring
  • 8 Mini prebaked pastry shells, or graham cracker crumb shells

Steps

  • Preheat oven to 325°
  • Beat egg yolks, in medium size bowl with rotary beater or fork
  • Gradually beat in condensed milk, lime juice, zest, and food coloring
  • Pour into individual shells, bake 20 to 25 minutes or until set
  • Remove from oven, cool for 1 hour and chill in the refrigerator for three hours. Place a dollop of whipped cream on each pie.
