Mac & cheese, baked potato

Ingredients:

  • 2 Rustic potatoes, can also use Yukon golden potatoes
  • 2 tablespoons of leftover mac & cheese
  • 1/4 of a cup of breadcrumbs

Steps

  • Preheat oven 425°. line a baking sheet with parchment paper.
  • Wash potatoes before placing in oven, then pat dry, rub potatoes with olive oil and sprinkle with Sea or kosher salt.
  • Bake 45 to 60 minutes until skins are crisp and puffy.
  • While potato is still hot, cut open and scoop out a small amount of potatoes then place 1 tablespoon of mac & cheese on each potato, sprinkle breadcrumbs on top and place potato back in oven for five minutes for a crunchy nish.
