Mini Apple Pies

Ingredients:

  • 4 to 5 firm apples, granny Smith or golden delicious apples would work best.
  • 1/4 cup white sugar
  • 1table spoon of brown sugar.
  • 1 teaspoon of ground cinnamon A pinch of nutmeg.
  • 2 teaspoons flour
  • 2 tablespoons cold butter
  • 2 teaspoon vanilla extract
  • Two packs of refrigerated piecrust.

Steps:

  1. Preheat oven to 425, spray muffin tin with no stick cooking spray, and set Unroll pie crusts onto lightly floured surface, using a biscuit cutter, cut out six rounds. Reroll scraps of crust then cut out two strips for each pie.
  2. Press dough rounds, into muffin Set aside.
  3. Peel and thinly slice apples
  4. In a bowl, toss apples, brown sugar, flour, vanilla, cinnamon,and nutmeg
  5. Divide mixture evenly among the muffin
  6. Place a small amount of butter on each pie, then top with pre-cut pie crust strips. this should be placed in a crisscross fashion, cutting off any overlapping strips once placed on the individual
  7. Bake 15 to 18 minutes or until topping is golden brown, cool on a rack for 10 minutes.
